01 / ABOUT THE PLACE

About this place

Arakawa shiitake ramen generously employs domestic donko dried shiitake mushrooms, pouring their deep, savory broth directly into the bowl—a standout choice at Higashi-Nippori's Mizuji. Thick and juicy shiitake offer a pleasing bite as mild broth spreads across the palate, bolstered by an abundance of vegetables for a thoroughly satisfying meal that finishes cleanly and gently.

The shop's classic noodle bowls also reflect meticulous craft. The salt-seasoned tanmen features smooth, slurpable noodles tossed with tender pork offal, lifted by the lively aroma and crisp bite of fresh cloud ear mushrooms. A miso ramen is also on hand, dialed back in saltiness to let the aromatic dashi broth and the natural sweetness of the vegetables come to the fore, giving diners varied ways to enjoy their greens.

Small gyoza can be easily added to any noodle order in units of 3. Run single-handedly by the owner-chef, the compact interior maintains a calm and unhurried feel, welcoming solo diners day or night for an honest, unpretentious Chinese meal.
